The Kitchen in the Old Cellar

Die Swael opened in 2019 in the stone cellar the Huguenot family built in 1898, and it still has the thick walls, the cool air and the swallows under the eaves.

Head chef Sipho Mthembu cooks what the farm and the valley give that week: trout from Franschhoek, Karoo lamb, vegetables from the valley and olive oil pressed on the farm.

Vines on Three Sides of the Table

In warm weather the tables move out to the cellar terrace, close enough to the vines to see what next year’s wine is doing.
